Could you leave out the shelves on one side?
Yes, the shelves are adjustable and you can remove them entirely if you wish. I wouldn’t recommend buying this product though. It’s very flimsy and not worth the cost.

Good instructions and pretty easy to put together with two people (comes with big pieces preassembled which is great, but needs two people to manage). End product looks good and was exactly as expected. Maybe a little less solid than I would have liked, but fine for the intended use for gardening tools and bee keeping equipment. Just slightly too small to hold a standard beekeeping box (dimensions suggest it should fit but centre board makes it impossible without modification). Still a handy storage area and good looking cabinet.

Not worth the money
I put this storage cabinet outside, under a fairly covered area and after the first rain, it swelled so much with moisture that I was unable to easily open the doors. Once I forcibly pried them open (accidentally pulling the roof off, which for the record is only put together with small staples), I was completely unable to close them. The hardware has already begun to rust on both of the sliding latches. I have had this for less than 3 weeks, I can only imagine how it will be after 2 years. I do not recommend.

Poorly designed, will not last
I purchased two different Leisure Season storage sheds, and was very unhappy with the quality of both sheds. These sheds will not last a year before they start to leak and fall apart. I had a problem with a defective roof liner on one of the sheds, but found it completely impossible to get in contact with the manufacturer for a replacement. Forget about warranty for these products, in fact forget all about Leisure Season with their inferior products and buy something else instead.
