What's it like to adjust or maintain temperature? Is it very difficult? I would imagine it is a matter of adding more or less charcoal? I'm used to the electric Bradleys but am looking for something bigger.
Hello Bbbbb, the temperature can be effected by the amount of charcoal that is used, adjusting the vents and the smoke stack, and the temperature can be reduced quickly by opening the doors. - GHP Group Customer Support

Good smoker for the price.
I will say right off, this is not a cold weather smoker. However I have used it successfully in cold weather with insulated blanket. Otherwise a good smoker for the money.I used food grade silicone and seal stripping for the firebox door and it is tight.I then purchased a charcoal/ wood basket from Lava Lock and can get a 6-8 hr burn.I have easily fit 60lbs of Brisket at once in this smoker. Hard to beat for the price!

Great Looks, Poor Performance
Pros: This smoker has tons of space for food and looks aesthetically pleasing.
Cons: The metal is way too thin and the smoking chamber cannot hold temps above 200. The grease trap is horribly undersized and when you try to clean it out it requires you to tip it up to get past some tabs. I also had to fashion a baffle to spread the heat evenly within the chamber. If you don't have something all of the heat rises directly adjacent to the firebox and you end up burning everything.
If this gets redesigned with thicker materials and better flow control this would be an awesome smoker, but as it is right now this thing is a waste of money.

I love this smoker!
I have been BBQ'ing for years. I have had brinkman smokers (messy and hard to regulate) and I have had offset grill/smokers. I still use my offset for certain types of cooking, but this smoker is great. I have cooked on it every weekend since it arrived. It was not difficult to assemble. It took my wife and I about one and a half hours total. There is a learning curve to getting the hang of it but it is very easy to regulate.
I had the same problem as everyone else with the thermometer but fairly easy to remove front and correct.
I have read some reviews saying it was difficult to get maximum heat. I have found that when using a water pan you will loose some heat. The trick is to use "Lump" charcoal as it burns hotter than briquettes. Also use less water in pan and replenish as needed.
I believe I could cook as many as 9 butts at a time if I wanted.

Just what I needed.
I've been smoking for a couple of years using this model's predecessor, which is very similar, but not as wide. This model offers LOTS of space inside with six shelves, hanging hooks and an optional rib rack. Quality is OK but not really heavy gauge material for the cooker and firebox walls. The firebox does have in improved design with double wall on top and where it attaches to cooker, making fit up more solid. The cooker door now comes with a built-in seal and the firebox intake is a sliding plate, verses the rotary vent. Count on getting about 5 hours of burn with a load of good briquettes, more like 2-3 with lump charcoal. You can get some nice flames entering the cooker when this thing is going full-blast, so I put a shelf on the lowest set of holes and use a water pan right over the inlet to help diffuse the heat. Works just right. The five remaining shelves will still hold all kinds of food. With my previous smoker, I couldn't fit a full rack of ribs or a full brisket on the shelves because of the size. I just smoked a 16.5 lb. brisket last week and had LOTS of room to spare on the shelf. I'm sure you could cook 4 nice sized turkeys in this thing if you wanted to. Eight or twelve pork butts would be no problem, and 10-15 racks of ribs seems reasonable, too. You can crank the heat up to over 300 degrees with no problem, or make the coals last, low and slow. This smoker isn't high-end, but it's put together pretty well. This one really does the trick for me. The price was very reasonable compared to most of the other models on the market that I've researched. There are a couple of minor concerns I'd like to mention: While this is packaged nicely, there isn't a lot of padding. Mine arrived via UPS and I had to use a hammer and block of wood to get some of the dents out. I suggest you get it shipped to the store and pick it up there (if you can, it's a pretty big box). The other issue is that there doesn't seem to be a cover available for it (yet). That would help this thing last, I think.

Great style, needs a few mods though
I bought this smoker last wednesday and set it up that night. did a test/seasoning run as per the instructions that came with the unit. Set up took me about 30 minutes with a power drill/screwdriver. I'm 6'2 250 so a second person wasn't required. First Problem was that the unit dripped black liquid all over my deck from what I assume was the assembly oil used to protect the unit in storage and shipping. This should be pointed out in the instructions as now I need to power wash my deck. Next thing is, there are a few leaks on the unit especially around the fire box door and where the firebox mounts to the smoke chamber. These are easily remedied by using a high temp FDA approved food grade silicone in these areas on assembly. Again, this should be pointed out in the assembly instructions. next, the heat distribution is somewhat lacking as the heat from the firebox goes directly up the side of the smoke chamber that the firebox is mounted on potentially scorching anything that is on the bottom rack or along the same wall as the firebox. This too is easily fixed by adding a sheet metal baffle about 12-16 inches long that slants downward at a 45 degree angle and is mounted directly above the top pass through from the firebox to the smoke chamber. Also it would be helpful to have some tried and tested recipies to try with this unit. Granted, this isn't a high end unit, but these simple modifications would certainly improve an already good design and make this the cadillac of backyard smokers.

I Like it but....
I recently purchased this and love the concept and the smoking capacity but I can't seem to get the temp above 190-200, outside the recommended smoking temp on it's thermometer. I've tried just briquettes, briquettes and lump charcoal mix and just lump charcoal. I have loaded it with the 5lb recommendation and even tried more, with the same result. I also have the much smaller Dyna-Glo compact charcoal smoker and can obtain any temp I would like with it. At this point I can't recommend this item [This review was collected as part of a promotion.]

Instructions say 15 minutes assembly. It takes more than 15 minutes just to unwrap parts. Mine had minor flaws - imperfections in predrilled holes for racks. Temperature gauge defective. Smoke leaks around firebox door. Smoker body door does not hang evenly - functions fine just a little off. Spend the extra $$ and get something with more quality.

great smoker
I've been using a barrel smoker for 20 plus years but needed smoker that offered more room and potential to cook a variety of meats at same time. Smoker arrived within 5 days of order. Assembly was easy. A few modifications, used gasket material from "LavaRock" around fire box to smoke chamber connection, fire box door and smoke stack connection. Able to achieve and maintain proper temp very quickly. Just finished smoking/cooking chicken quarters, baby-back ribs and pan of baked beans all at same time. The separate sliding grills are great along with the access to the sliding charcoal chamber. The side door latch works great, but lower latch harder to use (possibly revise to using door handle/locking system like on smaller smoker model). Overall great design. Looking forward to planning the next menu for the family get together.
